May 12, 2020 - 242 - “Healthy Meal-Prep for Pounding Pandemic Pudge”





Idle Hours to Peruse the Refrigerator



      My weight and health are not going in the right direction during this stay-home pandemic isolation situation.

     I found a website that had a week's worth of low-carb meals, with the grocery list, and how to pre-pack part of them.  Sweet!

Plan My Life, Please!

     I enjoy cooking, but meal planning and grocery list making are not my forte. 

     The nice lady at Kitchn did it all for me!  She planned the meals, made a grocery list, and planned how to prep for the meals.  

     My only complaint is that she said it took a couple of hours of prep work.  I spent a couple of hours just chopping all the vegetables for the week!   But I can see that I'd be faster if I did it again.  I spent a lot of time double-checking stuff.  Was I supposed to dice the zucchini and slice the cucumber...or the other way around?  How many bell peppers do I need?... 


    The veggies above were just for one dish!  

     That would have been fine except I started kind of late in the evening, so I had to put all the chopped stuff away and start again this morning.

    There are a couple of meals to do minimal prep for, for dinners.  Then there are some pre-cooked breakfasts and lunch dishes.  That part went pretty quickly.

    Here's some beautiful healthy-food feasts...for the eyes...  I'm most proud of the fact that I remembered to take progress pictures as I went through the steps.  











Then I boiled some eggs...



Made some keto-friendly tuna salad.  (Sadly, no apples...I love apples in tuna salad.)



Then I ate a slice of the frittata, which was exceptionally moist and flavorful.  Yum!


Then I prepped a ton of meals for the week.  (I got a pack of reusable meal-prep containers...just wish I"d gotten some with compartments 'cause I had to find small containers to contain the tuna salad.)


Got them all assembled and sealed up!




Then I remembered I was supposed to add a boiled egg to the tuna meals.  So I got the eggs peeled, added them to the containers.  Phew!  I didn't finish last night, but got up early this morning and had it all done with the whole day still ahead of me.





Day Takes a Turn for the Frightening

    Then I got a scary call from my mom, who was worried about my dad, so Michael and I rushed out of the house to check on my dad.

     And that's why this post is like it is.   

     Dad was fine (thank heavens!!), but he put Michael and me to hard labor in the garden, then sent us on an errand...  Now that I'm back home, I have zero energy left to do much more than caption these pictures.  

      I can't even remember what I was initially going to say about this.

      The good news is:  I had lots of extra meals to take out to my dad, so he'll have some no-prep stuff in the fridge.

     Good night.  I mean...uh...talk to you tomorrow.
